Smoked standing rib roast for beef lovers
While preparing this wonderful meat recipe for Christmas may take you almost half a day, the smoked standing rib roast will be a sure hit especially among beef lovers. It can yield the most flavorful and tender meat. Plus it is very appealing visually, making it a great dish to have this Christmas.
Ingredients are 15 pounds of charcoal briquets, two pounds of hickory wood chips a cup of bourbon whiskey, one standing rib roast (bone in), and ½ cup steak seasoning. Preparation time is 5 minutes while cooking time is 10 hours.
Start with 10 pounds of charcoal briquets in a torpedo style smoker. Put cold water on the secondary pan and wait for the coals to turn white. Soak the hickory chips in bourbon with water to cover.
Rub the roast liberally with steak seasoning. Once the coals have turned white, then place the roast on the top grate. Put some soaked hickory chips to the fire before closing the lid. Every 45 minutes or so, check the fire or add more wood chips. Cook for 10 hours or until the meat has reached your desired doneness.

Honey glazed ham—everyone’s favorite!
Christmas dinner won’t be complete without the popular honey glazed ham. You can prepare your own honey glazed ham so you don’t have to fight the crowds to be able to buy the famous honey baked ham sold in groceries.
Ingredients are about 5 pounds of ready-to-eat ham, ¼ cup whole cloves, ¼ cup dark corn syrup, 2 cups of honey, and 2/3 cup of butter. This should be ready in 1 hour and 30 minutes, with cooking time at around an hour and 15 minutes.
To cook, preheat the oven to 325 degrees F. Score ham and put whole cloves. Then place the meat in foil lined pan.
Heat the corn syrup, honey, and butter in the top half of a double boiler. Keep the glaze warm while you bake the ham.
Brush glaze over ham then bake it for 1 hour and 15 minutes in the preheated oven. Put honey glaze over the ham every 15 minutes. In the final 5 minutes of baking, turn on the broiler to caramelize the glaze. Then remove the meat from the oven and let it sit for a few minutes before serving.

Cornish game hens for a cold night
This meal should go well with wine and rusty garlic bread on a cold, winter night. Plus, it is very easy to cook.
You’ll need four Cornish game hens, a quartered lemon, salt and pepper, 4 sprigs of fresh rosemary, and 3 tablespoons of olive oil. You’ll also need about 20 cloves of garlic, 1/3 cup of white wine, and 1/3 cup of low sodium chicken broth.
To start, preheat the oven to 450 degrees F. Put a tablespoon of olive oil on the hens, then lightly season with salt and pepper. Put one lemon wedge and another sprig rosemary in the cavity of each hen. Place the hens in a large roasting pan, and arrange the garlic cloves around them. Roast in the preheated oven for around 25 minutes.
Reduce the oven temperature to 350 degrees after 25 minutes. Then whisk together wine, chicken broth and olive oil in a mixing bowl. Then pour over the hens. Continue to roast them for around 25 minutes, or until the meat has become golden brown in color and its juices run clear. Baste with pan juices every 10 to 15 minutes.
Transfer the hens to a platter, then pour the remaining cavity juices into the roasting pan. Place the hens in an aluminum foil to keep it warm. Transfer the pan juices as well as the garlic cloves to a medium saucepan, boiling it until the liquids are saucy or after six minutes.
Cut the hens in half lengthwise, then arrange them on plates. Spoon the sauce and garlic around the hens, and garnish it with rosemary sprigs before serving.

Famous beef tenderloin—an easy to cook meal
This is another delicious and easy to prepare meal this Christmas. In fact you won’t need an hour to prepare this dish.
You’ll need three pounds of beef tenderloin roast, ¾ cups of soy sauce, and half cup of melted butter. Preheat the oven to 350 degrees F, the place the roast into a glass baking dish. Pour soy sauce and the melted butter over the roast, and cook it for 45 minutes.
